If you have overripe bananas and aren’t ready to roast them, don’t waste them. Refrigerate. When mashed, they usually make about 1 cup, so I usually freeze them in two or three bags (which is what most banana bread recipes call for). Simply peel and place in an airtight container or freezer bag. When you’re ready to use it, thaw it in the bag and then mash it.

This banana bread recipe has been my favorite since 2013! Yes, I have tried other recipes and I always come back to this one. I won’t lie when I say that I make this easy bread recipe almost every week and it never lasts more than 3 days!
But over the years, I’ve found that frozen overripe bananas turn delicious banana bread into something you can’t stop eating!
When thawed, bananas become very sticky and runny. And all that juice is gold! Do not release liquid. It makes the bread moist and delicious.
Once you have lots of black-spotted ripe bananas, put them in the freezer. (And yes, black bananas are absolutely great!)
Classic Banana Bread Recipe
Make the batter using a very large bowl. I use a 4qt bowl (the largest bowl in this set).
To check for doneness, insert a long bamboo skewer or toothpick. When the bread is clean, the bread is ready!
And if you want to make a half batch (1 loaf or 12 muffins), follow my banana muffin recipe instead. The recipe is the same, but half the quantity.
But I always keep it in the refrigerator. Mostly to make them invisible. Otherwise, it will disappear in a few hours.

This recipe calls for an 8-by-4-inch loaf pan that makes a long loaf. This recipe also works with an 8 1/2 x 4 1/2 inch loaf pan, resulting in a slightly shorter loaf. Since the frying pan is slightly larger, the cooking time is shorter at 47 to 57 minutes. A 9 x 5 inch pan makes especially short but delicious loaves. Bake for 45-55 minutes.
