Quick disclaimer first. Some of my recipes are guilty of demanding the best. I know this is very subjective. But I promise you, I don’t take this word lightly.
Banana Bread Easy Recipe With 2 Bananas
This banana bread recipe has been around since 2013! Yes, I have tried other recipes, but I always come back to this one. I won’t lie if I make this quick bread recipe almost weekly and it doesn’t last more than 3 days!
Banana Bread With Oil (no Butter Banana Bread)
However, I have found over the years that frozen overripe bananas turn good banana bread into an unstoppable mess!
This is because bananas are high and runny when thawed. All that juice is gold! Don’t skip the liquid, it makes the bread moist and delicious.
Freeze good, ripe bananas with lots of black spots. (Yes, it’s totally okay to use black bananas!)
Use a very large bowl to make the bowl. I use a 4 quart jar (the largest jar in this set).
Easy Buckwheat Flour Banana Bread
Insert a long wooden skewer or toothpick. If it comes out clean, the bread is done!
If you want to make a half batch (just 1 loaf or 12 muffins), follow the banana muffin recipe instead. Same recipe but for half the batch.
However, I always keep them in the fridge. Especially if you keep them out of sight, or they disappear within a few hours.
To keep banana bread moist, cover it with plastic wrap or store it in an airtight container.
Banana Walnut Bread
To serve, I microwave a slice for 30 seconds or so, and it’s like fresh out of the oven!

So one way of saying it is that it’s softer to the touch. The bark will also have brown spots. A fully ripe banana for banana bread will be nice and soft and have lots of brown spots. They don’t make very good banana bread if they have any greens in the crust. On the other hand, make sure they are not overcooked, because they can stick to them.
As I mentioned above, this recipe is for 2 banana breads and we only use 2 bananas, so they have to be really good sized. Also, the actual brand of banana doesn’t really matter.
Honey Banana Bread
Banana bread does not need to be refrigerated. It’s fine on your computer at room temperature. Store in an airtight container to maximize freshness. We recommend a must-have in every kitchen! Banana bread should stay fresh in this container for about 1 week.
You can easily freeze banana bread. Allow to cool completely. Then refrigerate and cover with a freezer bag. It keeps well in your fridge for about 5 months. You can freeze all the bread and thaw it when needed. Alternatively, you can cut the bread into slices and freeze them separately, or at least separate them with parchment paper. So you only need to bring what you need!
