Banana Bread 2 Ripe Bananas

Banana Bread 2 Ripe Bananas – This 2 banana bread recipe creates a delicious banana bread using only two bananas. Sometimes you run out of bananas and only have 2 bananas left at home (compared to the 3 bananas needed for most banana bread recipes). So instead of making a special trip to the supermarket to buy more bananas, here’s a simple “emergency recipe” to make amazingly delicious banana bread with just 2 bananas.

The secret is to replace the missing banana with something that is usually in your fridge. There should be no need to run to the supermarket to buy missing bananas… or look for some crazy banana substitute. I like to use milk as an easy banana substitute (if I’m missing a single banana when baking banana bread). Milk adds the necessary moisture and doesn’t overpower the banana flavor of the two bananas. Also, the mild taste of the milk seems to enhance the flavor of the “cakey” ingredients in banana bread.

Banana Bread 2 Ripe Bananas

FYI – Many other recipes cut their ingredients by 1/3 when they only have 2 bananas. However, this results in short mini banana breads (which are often too crunchy and/or too hard). I’d rather create a delicious normal sized banana bread… that uses 2 bananas and some milk. But does this 2 banana bread recipe have the same banana flavor as the 3 banana bread recipe? No. It has a nice banana flavor but not as much as a standard 3 banana recipe. Best as a good “emergency” recipe if you are in a situation where there are only 2 ripe bananas. However, we also show below how chocolate chips, blueberries etc. added to make this 2 banana banana bread even better!

Your wonderful comments inspire us to write more simple and tasty recipes. Plus beginner bakers learn tons of your helpful suggestions, tips, and great recipe variations. Thanks! This recipe was inspired by three things. First, sometimes you want to make banana bread but you only have one ripe banana.

Or maybe I should say, sometimes you have a ripe banana and you want to do something with it (preferably make bread). But is the lone banana enough alone?

Second, sometimes you just want to bake something. Is it just me, or does everyone feel this way from time to time (especially during the winter months)? Ideally, I want to bake something simple that makes my whole kitchen smell amazing.

But I’d rather the end result NOT be a dozen cookies or scones or whatever because I know full well that I know this means I’ll probably eat a dozen cookies or scones over the next few days.

I want a little treat, sure, but mostly I want to bake something and just get a little piece of something at the end.

Third, and literally, this recipe is inspired by Chrissy Teigen’s recipe from her cookbook (which I love). But I’ll be the first to admit that this is a much simpler version that ultimately results in a smaller serving size.

It’s actually very different, but I was still inspired by her recipe and I love her cookbook so much I wanted to mention it anyway. 🙂

Banana Bread With Espresso

If you only have one banana, make this banana bread. If you love banana bread (raises hand) but lack self-control and don’t want a giant pile of cookies in your house, make this banana bread.

I added a second banana to the top of these mini-beats just for the visuals (just wanted to give you something nice to look at). This is not necessary and I actually found that it caused the batter just below the banana to bake unevenly. So I don’t really recommend it, but if you want the look…I get it. 🙂

Banana Bread Recipe (banana Bread With 2 Bananas)

This banana bread has been the most popular recipe on Simply Recipes for over 10 years. Thousands of people do it every day. Why?

Because it really is the best banana bread recipe, period. You can mix everything in a bowl, you can change the amount of sugar or bananas. And the secret to great taste? Melted butter.

The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork to beat the eggs and a sturdy spoon to mix the batter is all you need. The amount of sugar is flexible. The original recipe called for a cup of white sugar, but most people, myself included, do well with 3/4 cup, and many are happy with 1/2 cup.

You can throw in a cup of chopped nuts, raisins or chocolate chips if you like, or put the batter in muffin tins and make banana nut muffins instead. You can even go a step further and make chocolate banana bread.

Sourdough Discard Banana Bread

I got this banana bread recipe several years ago from my friend Heidi H, who many years before asked for the recipe from the mother of a ski buddy – Mrs. Hockmeyer. Thanks Heidi!

This recipe calls for an 8 x 4-inch loaf pan, which makes a tall loaf. The recipe also works in an 8 1/2- by 4 1/2-inch loaf pan, making for a slightly shorter loaf. Since the mold is slightly larger, the baking time is shorter: 47 to 57 minutes. A 9 x 5-inch pan makes a particularly short but still tasty loaf; bake for 45 to 55 minutes.

No mixer required for this recipe! Cleaning is also easy. If you want, you can mix everything in a bowl.

This recipe calls for an 8- by 4-inch loaf pan. If baking in an 8 1/2- by 4 1/2-inch pan, bake for 47 to 57 minutes. If baking in a 9 x 5-inch pan, bake for 45 to 55 minutes. Note that the larger pan produces a flatter loaf.

Easy Banana Bread
