The most important aspect of bananas is making sure they are ripe enough. As bananas begin to ripen, the starch in them turns into sugar, and they soften. So one way to tell is that they are soft to the touch. They will also start to develop brown spots on the bark. Fully ripe bananas used in banana bread will be nice and soft with nice brown spots. If the peel is green, it doesn’t make good banana bread. On the other hand, make sure they are not too ripe, as mold can grow on them by then.

As I mentioned above, this is a 2 banana bread recipe and since we only used 2 bananas, they had to be the perfect size. Other than that, the actual brand of the banana doesn’t matter.
